RED WINES
CABERNET FRANC: Dry
Cabernet is a very aromatic, red wine that is softer than the wines of Cabernet Sauvignon. Varietal descriptors include cherry, clove, violet, spice and berry. Cab Franc pairs well with a variety of foods including roasted pork, hamburgers, stew, meatballs in tomato sauce, chicken tomato curry, turkey with cranberry, wild game hens, lamb gyros, fried trout, pate and quiche. It also pairs well with a variety of soft cheeses such as goat cheese, Camembert, feta, and Fontina.
WERTZ RUN RED: Dry, Chambourcin grape
Grown in our vineyard, Chambourcin is a late–ripening grape that evolves into a mature wine characterized by caramel and chocolate flavors. Chambourcin is a food-friendly versatile wine that is often served with dark chocolate but also pairs well with tomato-based dishes, soft cheeses, hamburgers, steak, and game meats.
MALBEC: Dry
Malbec is a full-bodied, deep purple-colored, dry red wine that is fruit-forward with a velvety texture and flavors of black cherry, blueberry, plum, mocha and cocoa. Malbec pairs well with leaner red meats such as buffalo, roasted pork, dark meat poultry such as pheasant, and soft pungent cheeses such as blue cheese and gorgonzola.
MERLOT: Dry
Merlot is a softer dry red wine. A balanced wine that has characteristics of black cherry, raspberry, and plum. It can also have tones of cedar, vanilla, or mocha. Merlot pairs well with chicken and other light meats, lightly spiced dark meats, roasted tomatoes, roast duck, and especially beef bourguignon.
FRONTENAC: Semi-sweet
Grown in our vineyard, Frontenac is an extremely cold hardy, red-wine grape. This deep-colored wine has cherry, blackberry, black currant, and plum notes. Frontenac is a versatile wine and pairs well with hearty foods such as duck, pheasant, lamb, beef, pasta dishes made with tomato and eggplant. Also pairs with flavor ingredients such as pepper, mushrooms, black olives, and herbs (mint, thyme, rosemary).
STRAIGHT ARROW: Sweet, Marechal Foch grape
Grown in our vineyard, Marechal Foch is a French hybrid grape with a deep, inky purple color. It is early ripening and extracted with intense dark purple color, and black fruit flavor. Marechal Foch is oak aged, has big fruit flavors such as blackberry and currant. It pairs well with tuna, Jambalaya, roasted beetroot and broccoli salad.
WHITE WINES
WHITE FEATHER: Dry, Chardonnay
Chardonnay grapes are used to produce dry, white wines. Chardonnay has characteristics of citrus, peach and melon flavor, and also possesses a buttery richness. Chardonnay pairs well with mild, buttery or creamy dishes, fish and shellfish (lobster, crab, shrimp, and scallops), and lightly seasoned poultry and pork. Salty foods, such as French fries or potato chips bring out the citrus components of the wine.
CAYUGA WHITE: Dry
Cayuga is a grape that has a rich, crisp and bright style when served as a dry wine. Cayuga has powerful flavors of lemon, grapefruit, and tart apple. Cayuga pairs well with light meats such as lobster and chicken, glazed ham, and even apple pie.
FRONTENAC GRIS: Sweet
Grown in our vineyard, Frontenac Gris is a bud sport of Frontenac, identical in most aspects but lacking dark skin color. Frontenac Gris is a sweet white wine that presents aromas of peach and apricot with hints of citrus and tropical fruit. Frontenac Gris pairs well with seafood, salads, and field greens.
MOSCATO: Sweet
The Muscat grape used to make our Moscato wine is fragrant, light, and sweet. Moscato has aromas of mandarin orange, ripe pear, sweet meter lemon, orange blossom, and honeysuckle. It is one of the few wines that pairs well with Asian cuisine and spicy foods. It pairs especially well with aromatic spices such as cinnamon and nutmeg. Moscato pairs well with desserts made with rich caramels, chocolate, cherries, raspberries, or blackberries.
FRUIT WINES
BLUE GEM: Dry, Blueberry/Muscat
A surprising blueberry wine that is tangy and tart like eating fresh blueberries. It has citrus and merlot-like flavors. It pairs well with any sort of dessert, cheeses such as Swiss and Provolone and meats such as pork tenderloin, BBQ pork, and chicken.
BLACK-BEAR-EEE: Sweet, Blackberry/Muscat
A sweet blackberry wine made with locally harvested fruit. This sweet wine has flavors of apricot, mango, peach, honey and mint. It is best served chilled. This blackberry pairs well with spicy cuisine, chocolate, dried fruit, nuts and wide variety of hard and soft cheeses.
